I have grown ajwain for many years and always used fresh ajwain in my BBQ recipes and curry. Botanical name of ajwain is Trachyspermum ammi and not Hyoscyamus niger which is absolutely a different plant originating from Egypt. I am not sure if Hyoscyamus niger is found naturally somewhere in Pakistan but it is certainly not a native specie.
Philatelists would know that this is a very valuable stamp which is not easily available nowadays. Of course I have it (and almost all other stamps shown here) in my personal collection.
The Urdu name that appears on the stamp says ajwain khirasani, which seems that this particular plant is probably not native to Pakistan but from Khirasan. If you search the full name, rather than just ajawain then Hyoscymaus niger comes up.
